The price is decided at the time of signing: creating your review plan

In institutional food service, the price of a meal isn’t decided on a monthly basis: it’s set once, in a contract clause, and remains binding for several years. This is a €22.23 billion market in 2025 (Gira), where the Ministry of Finance’s legal affairs department strongly advises against fixed prices, even for contracts lasting less than a year. Meanwhile, costs fluctuate: food prices by food group, labor costs, energy, and transportation.

This white paper details the development of an adjustment formula that remains valid for the duration of a contract: index composition (eleven food categories, ICHT restaurant index, operating costs), the choice between on-site and delivered indices, semi-annual or quarterly frequency, six pitfalls in drafting, and explicit funding for the EGalim trajectory.
